I have made everything posted here. If I can do it, you certainly can. Someday, if there is enough interest, I will gather all these recipes into a cookbook. In the meantime, in the spirit of dashes, dollops and three-fingered pinches, I present them here for you to try. Let me know what you think.

 

Last camping trip, we made reubens in the pie irons. They were fabulous!

Ingredients

  • rye bread
  • oil, butter, or lard
  • thin sliced corned beef
  • 1 small can sauerkraut
  • horseradish sauce
  • Swiss cheese

 

We preheated the pie irons over hot coals while assembling the sandwiches.

I placed several thin slices of corned beef smeared with horseradish sauce on a slice of rye. A fork of kraut and a slice of Swiss cheese topped the meat, and another slice of bread finished the construction.

After coating the hot irons with olive oil, the sandwiches were locked inside and the pie irons were returned to the coals.

We turned the irons several times; in less than five minutes we had a piping hot meal.
