Looking Sharp

The Adventurer, Vernon Wade

Vernon was born in the Pacific Northwest and still lives in the shadow of Mt. Hood, near the small town where he grew up. Vernon has spent decades wandering the hills, hunting mushrooms, camping and riding motorcycles into the remotest nooks and crannies to be found in the region.

Jason came over after work with his Edge Pro kit and sharpened our knives.

I cooked while Jason worked his way through our collection of knives. We had BBQ beef sandwiches, roasted zucchini , and Wy’East rosé.

Jason worked until the sun set, sharpening most of our knives before it got too dark to see. It was almost hypnotic to watch as he rhythmically ground each knife, producing a fine, gleaming silver band along each edge.

The Edge Pro is manufactured here in Hood River. The base attaches to smooth surfaces with a suction cup and a powerful magnet holds your knife in place. A flat bar with an abrasive attached is adjusted to the desired angle and dragged across the knife to grind the edge. Progressively finer abrasives are used, producing an even, razor sharp edge.

I am sure you will love it. If your kit doesn’t come with anything finer than 400 grit, you might check with them about getting some finer abrasive or polishing stones for a really smooth edge.
